Terraforming Mars by FryxGames is certainly one of the regular board games I play in which STEM features quite heavily in its mechanics and, as gameplay involves raising the O2 levels and liberating liquid water on the Martian surface, chemistry plays a part.
The Manhattan Project and the subsequent The Manhattan Project: Energy Empire also tick a few chemistry-related boxes-the latter is a turn-limited game that sees you playing the role of a country balancing development of power plants with environmental damage.
Although I have never played it, one could argue that Potion Explosion's alchemical theme might appeal to some adventurous synthetic chemists.
